As a special treat for our Redfin friends, we're sharing our famous Brown Sugar Iced Pumpkin Cookie recipe. These seasonal delights are only available during fall, so grab your broomstick and fly over to our website to order a batch before they disappear!

 



Frosted Pumpkin Cookies


Yield: about 12 dozen, or using 2 TBS scoop, 20 cookies


Dough


  • 1 cup butter, softened

  • ½ cup sugar

  • ½ cup firmly packed brown sugar

  • 1 egg

  • 1 cup cooked, mashed pumpkin

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 2.5 tsp ground  cinnamon

  • ½ tsp ground nutmeg

  • ½ tsp ground ginger

  • ½ cup chopped pecans or walnuts

  • ½ cup chopped raisins or dates


Frosting:


  • ½ cup firmly packed brown sugar

  • ¼ cup milk

  • 1 TBS butter

  • 1 cup sifted powdered sugar

  • ¾ tsp vanilla extract


Method:


Oven 375 degrees.

Cream 1 cup butter; gradually add white and brown sugars, beating well at medium speed until light and fluffy. Add egg; beat well. Stir in vanilla extract and pumpkin.

Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger in a medium bowl. Gradually add to pumpkin mixture, stirring well. Stir in pecans and raisins.

Drop dough by rounded teaspoonfuls onto greased cookie sheet. Bake 375 degrees for 10 minutes, or until cookies are lightly browned. Cool slightly on cookie sheets and transfer to wire racks to cool completely.


Frosting:

Combine brown sugar, milk and butter in small saucepan. Cook over low heat, stirring constantly until butter melts and sugar dissolves. Remove from heat, and add powdered sugar and vanilla extract, beating at low speed until mixture is smooth. Spread frosting over cookies.”
