Baked Overnight Caramel French Toast
Overall Time: 9 hours approx.
Active Prep Time: 1 hour approx.
1 cup packed brown sugar
6 tablespoons butter or margarine
1/3 cup whipping (heavy) cream
1 tablespoon light corn syrup
(Fresh fruit of your choice for a little something extra!)
1/2 cup of milk
1 teaspoon vanilla
1/4 teaspoon salt
8 (3/4) diagonal cut slices French bread
a. Spray 13×9 (3-quart) glass baking dish with cooking spray. Set aside.
b. In a 2 quart saucepan, mix all topping ingredients.
c. Stirring constantly, cook over medium heat until mixture is smooth.
(Watch carefully and be careful not to boil or overheat!)
d. Spread smooth mixture into baking dish from Step 1.
a. Beat eggs in a medium sized bowl, then add milk, vanilla, and salt.
b. Dip bread slices into the egg mixture, being mindful that all the egg mixture is absorbed.
c. Arrange dipped bread slices over toppings mixture already in the baking dish.
d. Cover and refrigerate overnight or for at least 8 hours.
a. When ready to bake, heat oven to 400 F.
b. Uncover baking dish and bake for 20 to 25 minutes, or until mixture is bubbly and toast is golden brown.
c. Remove from oven and let stand for 3 minutes.
a. Using over mitts, lace a large heatproof serving platter upside down over the baking dish, then turn platter and baking dish over.
b. Remove the baking dish and use a spatula to scrape any extra topping onto the toast.
c. Top with fresh fruit of your choice.
d. Serve immediately.
